Seasonal summer vegetable tips
1. Make tomato sauce effortlessly (and without burning!) in your slow cooker. Core tomatoes. Pile them high in your slow cooker set on high. Flip off lights, go to bed. In the morning, blend it smooth in a blender or remove seeds and skin in a food mill. Freeze or pressure can. Sauce can be used in spaghetti, chili, soup, chicken casserole etc.
2. Not all salads are made with lettuce. Grill zucchini and yellow squash on the grill (brush with olive oil and sprinkle with salt), then dress with a mixture of 2 tablespoons each olive oil and fresh lemon juice, 2 teaspoons coarse-grained mustard and 1/4 teaspoon sugar. Taste for salt. Serve with grilled meat or as part of a vegetable plate.
3. If you’re grilling meat, add vegetables to the grill top. Dress grilled vegetables and serve as salad, or use them instead of lettuce on sandwiches, heat in a skillet with garlic to toss with pasta, or serve as a side dish.
