Apple Cider Glazed Pork Chops

Ingredients
- 4 bone-in or boneless pork chops, about 1 inch thick
- Salt and pepper
- 1 Tbsp olive oil
- 2 Tbsp butter, divided
- ½ medium-sized onion, diced
- 2 small Granny Smith apples, diced
- 1 clove garlic, minced
- 1 C apple cider
- 2 Tbsp apple cider vinegar
- 2 Tbsp brown sugar
- 1 Tbsp Dijon mustard
- 1 tsp fresh rosemary, minced
- 1 tsp fresh thyme, or ½ teaspoon dried, minced
Directions
Pat pork chops dry and season both sides with salt and pepper. Heat olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Working in batches as necessary, sear pork chops 5–7 minutes per side, until golden brown. Remove from skillet and set aside.
Reduce heat to medium. Add apples, onion and garlic to the skillet; cook until onions begin to soften, about 2–3 minutes. Stir in apple cider, apple cider vinegar, brown sugar, Dijon mustard, remaining butter, rosemary and thyme. Bring to a simmer and cook 5–7 minutes.
Return pork chops to skillet and spoon glaze over top. Cook 5 minutes per side, basting occasionally, until pork reaches an internal temperature of 145°. Season with additional salt and pepper, if desired. Serves 4.
