Bacon-Wrapped Pork Tenderloin

Ingredients
- 2 lb pork tenderloin
- Salt and pepper, to season
- 1 lb bacon
- 1 C peach preserves
- 2 Tbsp Dijon mustard
- 1 Tbsp apple cider vinegar
- ½ tsp ground thyme
Directions
Preheat oven to 400°. Season pork tenderloin with salt and pepper. Wrap bacon slices around tenderloin, securing ends with toothpicks. Each tenderloin should take 5-6 pieces of bacon. Place bacon-wrapped pork on a baking sheet and bake 20 minutes. While pork roasts, add peach preserves, Dijon mustard, apple cider vinegar and thyme to small saucepan. Bring to a simmer over medium heat for 5–7 minutes until thickened. Turn on low and stir occasionally until 20 minutes is up, then remove pork and brush peach preserves over top. Place back in oven and roast another 10–15 minutes until internal temperature reaches 145.° Serves 6.
