Broccoli Casserole

  • 2 (12 oz) packages frozen broccoli florets
  • 1 stick butter, divided
  • ½ lb Velveeta
  • Juice of ½ lemon
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp dry mustard
  • 1 sleeve Ritz crackers


Preheat oven to 350° and grease a 9×13-inch baking dish. 

Cook broccoli according to package directions and drain. Place in a large pot on the stove on low heat. Add ½ stick butter and Velveeta and let melt. 

Add lemon juice and spices. Add more salt and pepper to taste if needed and stir until cheese is fully melted. 

Melt the other ½ stick of butter. Crush the crackers and mix with melted butter. 

Pour broccoli cheese mixture in the dish and top evenly with crackers. Bake for 30 minutes. Serves 6–8.
