Candied Sweet Potato Casserole

  • 40 oz can Bruce’s Yams
  • 1 stick butter
  • 3 medium eggs
  • 2 C sugar
  • Dash cinnamon
  • Dash salt
  • 12 oz can evaporated milk
  • Topping
  • 2 C crushed cornflakes
  • 3/4 C chopped pecans
  • 3/4 C brown sugar (not packed)
  • 1 stick butter, melted


Preheat oven to 400° and grease 2-quart baking dish. 

Place yams in medium saucepan and bring to boil. Drain juice and add to large bowl. Add butter and let it melt. Add eggs, sugar, cinnamon and salt. Beat with mixer. Add evaporated milk and mix again; this will be a very thin liquid. 

Place in greased baking dish and bake in oven for 40 minutes. While casserole is baking, combine topping ingredients. Sprinkle the topping on the yams and bake additional 10 minutes. Serves 10–12.
