Ingredients
- ½ lb macaroni pasta (about half of a standard box)
- 1 lb ground beef
- 1 ½ tsp salt
- 1 ½ tsp garlic powder
- 1 ½ tsp chili powder
- 1 tsp onion powder
- 1 tsp dried oregano
- ½ tsp black pepper
- 1 (10 oz) can diced tomatoes with green chilies
- 1 (28 oz) can crushed tomatoes
- 10 oz Colby Jack cheese, shredded and divided
Directions
Preheat oven to 350°. Grease a 9×13-inch baking dish. Bring a pot of salted water to a boil. Cook macaroni for 5–7 minutes, just until slightly underdone. Drain and set aside. In a large skillet over medium heat, cook ground beef until browned, about 10–15 minutes. Drain excess grease. Stir in all the spices. Add cans of tomatoes and stir. Fold in partially cooked pasta and half the shredded cheese. Pour mixture into prepared baking dish and spread evenly. Top with remaining cheese. Bake 15–20 minutes, until edges are bubbly and cheese is melted. Serves 6.
