Easy Spinach Soup

  • 1⁄4 C sesame seeds
  • 2 Tbsp vegetable oil
  • 1 medium onion, chopped
  • 2 medium potatoes, chopped
  • 10–12 oz frozen spinach, thawed
  • Salt and pepper


Combine seeds and oil in a large saucepan and cook over medium heat. Cook until light brown, stirring occasionally. Add onion and cook 5 minutes. Add potatoes and cook 10 minutes, stirring. Add spinach, 2 cups of water, salt, pepper and nutmeg. Boil, then reduce heat and simmer 20 minutes or until potatoes are tender. Blend in blender 30 seconds, stir and repeat. Pour mixture back into pan and thin with 1 more cup of water. Heat through. Serves 4.
