- 1 lb leaf lettuce, preferably Black Seeded Simpson or Buttercrunch
- 4–5 green onions
- ½–1 lb bacon
- Salt and pepper
Wash and drain lettuce and place in large bowl. Wash green onions, slice thinly and add to bowl of lettuce.
Fry bacon until crisp and remove from skillet, reserving grease. Crumble bacon over lettuce and onions, as shown at right.
Heat bacon grease until sizzling, then spoon desired amount of hot bacon grease over lettuce and toss. Grease should be hot enough that lettuce immediately wilts. Season with salt and pepper to taste.
