Pecan Sandies

  • 1 C butter, softened
  • 1 C powdered sugar, plus 1 C reserved for rolling
  • 1 Tbsp vanilla extract
  • 1 Tbsp milk
  • 2 C flour
  • ⅛ tsp salt
  • 1 C pecans, finely chopped


Preheat oven to 325°. Mix softened butter and powdered sugar with stand mixer or hand mixer for 3-4 minutes until light and fluffy. Add vanilla and milk and mix until combined. Add flour and salt and mix until just combined—do not over mix. Add chopped pecans and mix until evenly distributed throughout dough and no flour streaks remain. 

Scoop out by tablespoons or so onto a baking sheet lined with parchment paper. Place in oven and bake 13–14 minutes. Remove and let cool completely. Once cooled, gently roll each cookie in powdered sugar until completely covered. Tap off any excess. Place on platter and enjoy! Makes 30 cookies.
