Sarah’s Baked Tomatoes

  • 8 medium tomatoes, cored and halved
  • 4 Tbsp olive oil
  • 2 cloves garlic, minced
  • 3⁄4 C each bread crumbs and Parmesan cheese
  • 1⁄2 tsp each salt and black pepper
  • 2 Tbsp chopped fresh basil


Preheat the oven to 400°. Grease a wide, shallow baking dish. Scoop seeds out of tomatoes. (Don’t worry about getting every bit.)

In a skillet, heat 2 tablespoons of olive oil with garlic over medium heat until aromatic. Add bread crumbs and stir 2 minutes. Remove from heat and add salt, pepper and cheese. Fill tomato cavities with crumbs, piling extras on top. Place on baking sheet and drizzle with remaining oil. Cook 20 to 25 minutes. Serves 8.
