Southern Blueberry Cobbler

Ingredients

  • 4 Tbsp butter
  • 1 pint fresh blueberries (roughly 2 C)
  • ½ C sugar
  • Juice of 1 lime + the zest
  • ½ C flour
  • ½ C sugar
  • ½ tsp baking powder
  • ⅛ tsp salt
  • ½ tsp vanilla bean paste (or 1 tsp vanilla extract)
  • ½ C cream
  • ½ C whole milk

Directions

Preheat oven to 375°. Place butter in a 7×9-inch (1.2 qt.) baking dish and put it in the oven for 5–10 minutes, until melted. In a bowl, combine blueberries, 1/2 cup sugar, lime juice and zest. Set aside. In a separate large bowl, whisk together flour, sugar, baking powder, salt, vanilla, cream and milk until a smooth, runny batter forms. Carefully pour the batter into the hot dish with melted butter, then spoon blueberries evenly over the top. Do not stir. Bake for 40 minutes, or until golden brown. Let cool for 10 minutes before serving. Serve with vanilla bean ice cream. Serves 6.
