Breakfast Tortilla Roll Ups

  • Serves 6.


  • 6 slices Canadian bacon or thinly sliced ham
  • 2 cups hash-brown potatoes
  • 2 cups Egg Beaters
  • 6 Tablespoons salsa
  • 6 large flour tortillas


Cut bacon or ham into thin strips. Brown meat and hash browns in skillet sprayed with cooking spray. Combine Egg Beaters and salsa in bowl and pour into skillet. Stir until thoroughly cooked. Spoon into flour tortillas and roll up.
