Grandmother’s Apple Cake

  • 2 C flour
  • 1 1⁄2 C sugar
  • 1 teaspoon cinnamon
  • 1 1⁄2 tsp baking soda
  • 1 tsp salt 4 apples, peeled and quartered
  • 3⁄4 C oil
  • 2 eggs, beaten
  • 1 tsp vanilla


This recipe came from Nicki’s grandmother. She and Nicki’s grandfather owned a restaurant, The Statesman, in Pennsylvania. It’s one of Tim’s favorite recipes.

Mix together all ingredients until combined. Pour into a greased baking dish (9×12-inch or 9×9 if you prefer a thicker cake) and bake 1 hour at 350°. Let cool and serve topped with powdered sugar. Will be very thick and dense.
