Abigail Adams’ Tofu Chocolate Pudding
- Serves 4.
- 12 ounces drained tofu (Any kind of tofu will work, but silken tofu already has a smooth, pudding-like consistency when you buy it.)
- 1/2 cup sugar
- 1/3 cup cocoa
- 2 tablespoons melted butter
- 1 teaspoon almond extract
- 1/2 teaspoon vanilla
- pinch of salt
The recipe for Abigail Adamsï¿½ tofu chocolate pudding is simple. Combine ingredients in a food processor or blender*. Blend/process until smooth, scraping down the sides of the container. Pour into a bowl or serving bowls and refrigerate 2 hours or overnight.
*Tracy says that this is slightly easier in the food processor than in the blender.
