  • 3/4 cup shortening
  • 1 cup molasses
  • 3 eggs
  • 4 cups flour
  • 1 teaspoon salt
  • 2 teaspoons soda
  • 1 teaspoon cinnamon

Directions

Cook the dried apples with the 2/3 cup of sugar and the allspice in a small amount of water. Set aside. Cream together 1 cup sugar and shortening. Add eggs and beat well. Sift dry ingredients together and add to batter. Add molasses and mix well. Pour in the boiling water and heat about 3 minutes. Press the dough into 6 greased and floured 9-inch cake pans and bake 325° for 15-20 minutes. While still slightly warm, stack the layers with the cooked dried apples between them. Do not put apples on top or frost the cake. Cover tightly and let age for a few days before cutting for the best flavor.
