Aunt Olive’s Receipt For Pressed Chicken

  • Serves 5-6


  • 3 (3-4 pound) stewing chickens
  • 6 cups hot water
  • 3 Tablespoons salt
  • 2 carrots, sliced
  • 2 cups celery, chopped
  • parsley, washed well and chopped
  • Bouquet garnish
  • 2 small onions, chopped


Cut chicken in pieces. Put in large kettle with remaining ingredients. Bring to boil; simmer about 3 hours, until chicken is very tender. Remove chicken from kettle; strain broth. Cool broth and skim any grease from top. Return broth to heat and simmer un
