Banana Coconut Custard


  • 3 eggs
  • 2 ripe bananas, cut in pieces
  • 1-1/2 cups milk
  • 1 teaspoon nutmeg
  • 1/2 teaspoon baking powder
  • 1/3 cup unbleached white flour
  • 1 cup flaked coconut


Blend eggs and banana pieces in a blender until smooth. Add remaining ingredients and blend.

Pour into 8-oz. custard cups and sprinkle with additional nutmeg and place in a large baking pan with 1 inch hot water in it.

Bake at 350″ for 45 minutes or until custard has set. Cool and refrigerate.
