Dark Chocolate Espresso Cookies

  • 1/2 C softened butter
  • 3/4 C brown sugar
  • 1/4 C sugar
  • 2 eggs
  • 2 Tbsp strong coffee
  • 1 tsp vanilla
  • 1 1/4 C flour
  • 1/2 C cocoa powder
  • 1 Tbsp espresso powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3.5 oz dark chocolate bar, roughly chopped
  • 1/2 C dark chocolate chips


Preheat oven to 350°. In a stand mixer, add butter and sugars and mix for 3–5 minutes until creamy and fluffy. Add eggs, coffee and vanilla and mix until well combined. Add flour, cocoa powder, espresso powder, baking soda and salt. Mix well. Finally, add the chopped chocolate bar and chips and mix until everything is incorporated. 

Scoop dough by the tablespoon onto a lined baking sheet and refrigerate for 30–60 minutes. Once chilled, bake in preheated oven for 10–11 minutes. Makes 30.
