Friendship Cake With Starter

  • Makes 2 Cakes

Ingredients

  • Starter
  • 1 (16 oz.) can sliced peaches
  • 1 (16 oz.) can chunk pineapple and juice
  • 1 medium jar Maraschino cherries (w/out juice)
  • Sugar
  • Cake
  • 2 boxes Duncan Hines Butter Recipe Golden Cake Mix
  • 2 boxes vanilla instant pudding
  • 8 eggs
  • 1 small bottle Wesson or Crisco oil
  • 2 cups raisins
  • 2 cups walnuts
  • 2 cuts pecans
  • 2 cups coconut

Directions

STARTER

In a glass jar:
Day 1: Take the 16 oz. can of sliced peaches and cut each peace slice into four smaller pieces. Add 2 and 1/2 cups of sugar. Stir and cover jar loosely with a saucer and leave sitting out at room temperature. Do not cover airtight or refrigerate. Stir once a day for 10 days.
Day 10: Take 1 (16 oz.) can chunk pineapple and juice. Cut each chunk in half and add 1/2 cup sugar. Add pineapple and sugar to original mixture and stir. Stir once a day for 10 days. The color has changed and the fruit will foam when stirred.
Day 20: Take 1 medium jar of Maraschino cherries (without the juice) and add 2 and 1/2 cups of sugar. Add cherries and sugar to original mixture and stir. Stir every day for the final 10 days. The cherries will give your mixture back its pink color.
Day 31: You are now ready to bake your cake.

CAKE

Preheat oven to 300°. Grease and flour two tube or Bundt pans. Drain fruit into a large bowl and pour juice into three one-pint jars. These are your “starters”—one to keep and one to give to two friends. The drained fruit will be extremely moist.

Pour one box of cake mix into a large bowl. Add one box of pudding. Mix four eggs, 2/3 cup of oil and 1 and 1/2 cups of fruit. Stir well with a wooden spoon. Do not use a mixer. Add one cup raisins, one cup chopped pecans or walnuts and one cup coconut. Stir batter and pour into pans. Bake for about 90 minutes or until a broom straw comes out clean

Other notes: Raisins, walnuts, pecans and coconut are optional. You can vary in either of these ingredients‘ amounts but all together are very good. Do this for each cake as it is better to prepare each cake separately. This recipe makes two cakes and the cake is a heavy, moist cake that freezes very well. It is delicious when served alone or with a scoop of vanilla ice cream or topped with Cool Whip.

Your friends need to add fruit to their starters from day one to day 31 and you do the same with your pint. You can keep it going or start over each time.
