- 1 quart heavy whipping cream
Using an electric mixer (I use a heavy KitchenAid and it works great for this) with a paddle attachment, whip cream on high several minutes or until you hear the sound of the motor change. The solids will have collected together and color will be pale yellow. I use the liquid for buttermilk for my buttermilk pies. This is a great thing to do when you have leftover whipping cream.
PREPARATION TIME: 10 minutes.
RECIPE HISTORY: I’ve done this for a long time. I like the taste of this butter.
