Italian Meat Loaf

  • 2 bread slices
  • 1⁄3 C milk or beef broth
  • 1 egg
  • 1⁄4 C chopped fresh parsley
  • 1⁄4 C Parmesan cheese
  • 1 tsp each salt, basil and oregano
  • 1 garlic clove, minced
  • 1⁄2 tsp freshly ground pepper
  • 1 lb lean ground beef


Heat oven to 350°. Put bread in a bowl and add milk. When bread softens, mash it with a fork. Beat in egg. Add remaining ingredients except meat and beat to blend. Break up beef into the bowl, then mix only enough to blend ingredients. Form into a loaf on a shallow sheet pan and bake for 40 minutes. Serves 4.
