One-dish Chicken Thighs

  • 3 Tbsp olive oil, divided
  • 1 1⁄2 tsp salt, divided
  • 1⁄2 tsp cayenne pepper, divided
  • 1 medium onion
  • 1 lb sliced mushrooms
  • 1 tsp paprika
  • 6 chicken thighs


Heat oven to 400°.

Mix 1 tablespoon olive oil with 1 teaspoon salt and half the cayenne in a large bowl. Peel and slice onion  1⁄4-inch thick. Add to bowl along with mushrooms. Stir to coat with oil. Spread on a 13×18-inch sheet pan. Mix remaining oil, salt and cayenne with paprika. Stir chicken in the mixture to coat and place on top, among the vegetables. Bake for 35 minutes. Serves 6.
