- 2 lbs sweet potatoes
- 1⁄4 C butter
- 1⁄4 C sorghum
- 1 tsp cinnamon
- 1 tsp allspice
- 1⁄4 tsp cayenne pepper
- 1⁄4 C crystallized ginger, chopped small, optional

Heat oven to 400°.
Wash the sweet potatoes and pierce several times with a fork.
Place on cookie sheet and bake 40 minutes (large potatoes will take longer).
When cool, peel and put potatoes in a bowl.
Mash lightly with a fork.
Heat remaining ingredients in a small pan over low heat.
Stir to blend ingredients and melt butter.
Mash the mixture into sweet potatoes.
Dish can be made ahead and refrigerated or frozen. Serves6
