- 2 cans sardines (packaged in oil)
- 1 cup Monterey Jack cheese, shredded
- 1/4 cup green onions, sliced
- 2 Tablespoons lemon juice
- 2 oz. pimientos, chopped
- 1 teaspoon dried parsley, chopped
- 2 teaspoons lemon rind, cut into thin strips
Mash sardines lightly with fork.
Mix in remaining ingredients and serve over shredded lettuce.
