Sardine Jack Salad


  • 2 cans sardines (packaged in oil)
  • 1 cup Monterey Jack cheese, shredded
  • 1/4 cup green onions, sliced
  • 2 Tablespoons lemon juice
  • 2 oz. pimientos, chopped
  • 1 teaspoon dried parsley, chopped
  • 2 teaspoons lemon rind, cut into thin strips


Mash sardines lightly with fork.

Mix in remaining ingredients and serve over shredded lettuce.

Serves 4.
