Strawberry-Feta Salad

  • 1⁄3 C sugar
  • 1⁄3 C vinegar
  • 1⁄3 C vegetable oil
  • 1⁄2 tsp dry mustard
  • 1⁄2 tsp salt
  • 1⁄2 tsp paprika
  • 1 clove garlic, minced
  • 1 pint strawberries
  • 8 oz feta cheese, crumbled
  • 1 1⁄2 pounds (or so) washed salad greens, such as spinach or mesclun
  • Optional: fresh asparagus spears

Combine first 7 ingredients in a jar, close tightly, and shake to dissolve sugar (this dressing will keep for weeks refrigerated). Hull and slice strawberries. Place greens in a large bowl and toss with dressing to taste. Sprinkle with berries and feta cheese.
