Ingredients

  • 1 C old-fashioned oats
  • 2 eggs
  • ¾ C ketchup
  • 2 lb ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 tsp salt
  • ¾ tsp black pepper
  • 2 Tbsp garlic powder

Directions

Preheat oven to 350° and line a baking dish with foil or parchment paper. Combine oats, eggs and ketchup in large bowl and let sit 10 minutes to moisten. Add remaining ingredients to bowl and mix well. Shape into loaf and transfer to baking dish. Bake 45 minutes, then glaze with additional ketchup. Bake an additional 15–30 minutes, until meatloaf reaches internal temperature of 160° and topping is blistered.
