Butterscotch Pie

  • 8 slices


  • 3 egg yolks
  • 2 C. milk
  • 1 C. brown sugar
  • 6 T. flour
  • 1/2 tsp. salt
  • 4 T. butter
  • 1 tsp. vanilla
  • 2 T. brown sugar


Beat egg yolks and add milk. Combine 1 cup brown sugar, flour, and salt and add to milk mixture. Cook on medium heat until thick, stirring constantly. Add butter, vanilla, and 2 tablespoons brown sugar. Pour into baked pie shell, and top with meringue.

3 egg whites, beaten until fluffy
1/2 tsp. vanilla
1/4 tsp. cream of tartar
6 T. sugar
In large mixing bowl combine egg whites, vanilla, and cream of tartar. Beat until soft peaks form. Gradually beat in sugar 1 T. at a time. Continue beating on high speed until stiff and glossy (rub a small amount between two fingers; it should feel completely smooth). Put on top of pie and seal edges Bake in a 350 degree oven until delicately brown.
