Cornbread Salad

Ingredients
- 1 green bell pepper, diced
- 2 medium tomatoes, diced
- 1 sweet medium onion, diced
- 1 lb bacon, fried crisp and crumbled
- 6 boiled eggs, diced
- 1 pan cornbread, crumbled
- Mayonnaise
Directions
In a large bowl, mix together all ingredients except mayonnaise. Add enough mayonnaise to make the mixture moist, about 1 ½ cups. It should stick together. Don’t over mix. Place in a covered dish and refrigerate overnight. Serves 12-14.
