Country Ham with Cream Sauce on English Muffins


  • 4 Tablespoons unsalted butter
  • 4 Tablespoons all-purpose flour
  • 2 cups milk
  • 1 /4 teaspoon nutmeg
  • Salt and pepper
  • 1 lb. cooked country ham, diced
  • 2 teaspoons butter
  • 2 Tablespoons chopped chives
  • 5 Tablespoons sherry
  • 6 toasted English muffin halves


Melt 4 Tablespoons butter in saucepan and add flour, stirring well. Add milk and cook over medium heat, stirring constantly, until thickened. Add nutmeg, and salt and pepper to taste. Remove from heat.

In a skillet, simmer country ham in 2 teaspoons butter, 8 to 10 minutes, stirring occasionally. Add chives. Cook 3 to 4 minutes. Add sherry and heat through. Combine’ ham with cream sauce and serve over toasted English muffin halves.

Serves 6.
