Laura’s Stockyard Cafe’s Chocolate Pie

  • Crust
  • 1 cooked pie crust, store-bought or homemade
  • Filling
  • 1 C sugar, divided
  • ¼ C corn starch
  • ½ C cocoa 2 egg yolks, whites reserved
  • 3 C milk
  • 1 tsp vanilla extract
  • Meringue
  • 2 egg whites
  • ½ C sugar
  • 1 tsp cream of tartar


Preheat oven to 350°. To make meringue, beat egg whites and cream of tartar using stand mixer or hand mixer, adding sugar 1 tablespoon at a time, until stiff peaks form and sugar is dissolved. 

For filling, whisk cornstarch, cocoa and sugar in saucepan until smooth and free of lumps. Add egg yolks and vanilla and whisk again over medium heat until thickened. 

Pour into cooked pie crust, then spread top with meringue. Bake until meringue is browned, about 20 minutes. Cool completely.
