Pork Chops with Potato Stuffing


  • 6 to 8 boneless pork chops
  • 3 tablespoons of butter
  • ¼ cup apple juice
  • 1 teaspoon salt
  • ½ teaspoon of freshly ground pepper
  • Stuffing:4 cups prepared mashed potatoes
  • ¼ cup butter
  • 1 large onion, finely chopped
  • 3 small apples grated
  • 1 tablespoon fresh sage, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper


Preheat oven to 350.

Rub meat with butter, salt, and pepper.

Pour apple juice into 3 quart casserole, and line sides of casserole with chops.

To make stuffing, mix potatoes, butter, onion, apples, sage, thyme and salt and pepper.

Mix well and put into center of casserole dish.

Bake covered with foil for 45 minutes.

Uncover and continue baking 15 minutes longer.

6 to 8 servings
