Potato Candy


  • 1 Potato (size of large egg)
  • 1 (1 lb) box powder sugar
  • 1 1/2 teaspoon vanilla
  • pinch of salt
  • peanut butter


1. Peel potato and boil until soft.
2. Mash.
3. Add vanilla, salt, and sugar. Mixture will be consistancy of dough.
4. Roll out onto a powdered sugar surface to about the thickness of a pie crust.
5. Spread on peanut butter and then roll up like a jelly roll.
6. Put in refrigerator for about an hour to chill.
7. Slice and enjoy!!
