Slow Cooker Red Beans and Rice


  • 1 lb red beans
  • 1 medium onion, chopped
  • 2 Tbsp vegetable oil
  • 1 tbsp minced garlic
  • 1 tsp salt
  • Hot sauce to your taste
  • 1 lb (or so) smoked ham hocks
  • 8 C (or so) water
  • 4 cups cooked white rice
  • 1⁄4 cup chopped green onions for garnish

Rinse beans and pick out any debris.

Put beans in a large bowl and cover generously with water.

Set aside.

In a skillet, cook onion in vegetable oil over medium heat for 10 minutes, stirring.

Add garlic and cook 5 minutes more.

Scrape onions into slow cooker and add salt, hot sauce, and ham hocks.

Drain beans and add to slow cooker, then add water.

Turn on high heat and cook 8 hours or more, until beans are tender.

Pull ham off the bone and stir into beans.

Serve beans over rice garnished with green onions. Serves 8.
