Smoked Sausage With Peppers And Onions

  • Serves 2.


  • 1 Tablespoon vegetable oil
  • 3/4 lb. smoked Kielbasa, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1/4-inch strips
  • 1 red bell pepper, cut into 1/4-inch strips
  • 1 medium onion, sliced very thin
  • 1/2 cup water


In a large heavy skillet, heat oil over medium heat until very hot but not smoking. Brown smoked sausage and add vegetables, stirring for about a minute. Add water and simmer mixture, partially covered, 8-10 minutes until vegetables are tender. Serve mixture on a mound of cooked rice or pile onto a hoagie bun and enjoy State Fair style.
