Quick Breakfasts

Are you too busy in the morning to sit down to a good breakfast? The first meal of the day doesn’t have to involve a lot of fuss. Some meals can be made the night before and popped in the oven when you wake up. Breakfast packs a punch. It jump-starts your metabolism for the day, and it’s a proven fact that kids who eat a good breakfast perform better in school. Take the time to enjoy it.


BREAKFAST BERRY PARFAIT



1 small container vanilla yogurt



3 Tablespoons mixed berries



2 Tablespoons Grape Nuts cereal




Layer yogurt, berries, and cereal in a parfait glass. Repeat layers and serve. Serves 1.






BREAKFAST IN A BLENDER



1 ripe peach or banana



1/2 cup milk



1/2 cup yogurt (you may use light)



1 teaspoon honey or maple syrup



1 Tablespoon bran cereal or wheat germ




Combine all ingredients in blender or food processor. Process until smooth. Pour into a tall glass and serve immediately. Serves 1.

MUFFIN TIN BREAKFAST


6 slices ham, sliced thin



6 eggs



Box of muffin batter for 6 muffins (I often use Jiffy)




Preheat oven to 375°. Line 6 muffin tins with a slice of ham. Break an egg into each slice. Line 6 more muffin tins with paper liners and fill each 2/3 full with batter. Bake for 15-20 minutes or until eggs are set and muffins are golden brown. Serves 6.

GIANT FRENCH TOAST BREAKFAST

This is one of my favorite dishes to prepare for small kids. It puffs up into funny shapes and tastes like French toast. Make sure your kids see it when you take it out of the oven.




6 eggs



1 cup flour



1/2 teaspoon salt



1 cup milk



1 teaspoon vanilla



2 Tablespoons melted butter



Powdered sugar




Butter a 9 x 13 pan (do not use glass pans). Heat oven to 450°. In medium bowl, whisk together eggs, flour, salt, milk, vanilla, and melted butter. Pour into prepared pan and bake at 450° for 18 minutes. Then reduce heat to 350° and continue baking for an additional 10-12 minutes until puffed and golden brown. Remove and immediately sprinkle with powdered sugar or serve with melted butter and syrup. Serves 4-6.

BREAKFAST TORTILLA ROLL UPS


6 slices Canadian bacon or thinly sliced ham


2 cups hash-brown potatoes



2 cups Egg Beaters



6 Tablespoons salsa



6 large flour tortillas




Cut bacon or ham into thin strips. Brown meat and hash browns in skillet sprayed with cooking spray. Combine Egg Beaters and salsa in bowl and pour into skillet. Stir until thoroughly cooked. Spoon into flour tortillas and roll up. Serves 6.

INDIVIDUAL BREAKFAST QUICHES




6 eggs



2 cups milk



1 Tablespoon fresh chives or 1/2 Tablespoon dried



1/4 teaspoon salt



1/4 teaspoon ground pepper



2 cups grated Swiss or cheddar cheese



1 cup bacon, crumbled



1/2 cup onion, chopped



2-1/2 English muffins, crumbled




Preheat oven to 400°. Sauté onions in pan sprayed with cooking spray. Spray 6 ramekins with cooking spray. Beat together first five ingredients. Fold in cheese, bacon, onions, and English muffins. Ladle into greased ramekins and bake in 400° oven approximately 18-20 minutes. Serve in ramekins or loosen with knife around the sides and turn onto plate. Serves 6.
