Bourbon Pecan and Chocolate Slab Bars

Ingredients

  • Crust
  • 2 sticks butter
  • 1/2 C sugar
  • 3/4 C powdered sugar
  • 1 Tbsp bourbon*
  • 2 C flour
  • Filling
  • 2 Tbsp butter, melted
  • 3 eggs
  • 1/2 C brown sugar
  • 1/2 C corn syrup
  • 3 Tbsp bourbon*
  • 1/2 tsp salt
  • 1 Tbsp cornmeal
  • 1 1/2 C pecans, chopped
  • 3/4 C dark chocolate chips

Directions

Preheat oven to 325°. In a stand mixer, add butter and beat until fluffy. Add sugars and mix for 2 minutes until light and fluffy. Add bourbon and flour and mix until just combined. Dough will be crumbly. 

On a 9×13-inch baking sheet, lay parchment paper so that it hangs over the sides. Place dough on top and press down evenly and firmly with your hands. Bake 20 minutes. 

In a large bowl, whisk until combined the melted butter, eggs, brown sugar, corn syrup, bourbon, salt and cornmeal. Stir in chopped pecans and dark chocolate chips. 

Pour filling evenly over prebaked crust. Bake for 40–45 minutes until set in the middle. Remove from oven and let cool completely before cutting into squares. Serves 30. 

*You can substitute vanilla for bourbon (1 tsp in crust and 2 tsp in filling).
