Cabbage and Apple Salad


  • 1/2 Granny Smith or Red Delicious apple
  • 1/4 small head of cabbage
  • 1 Tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt to taste
  • 1 /4 cup pecans
  • 1 Tablespoon unsalted butter
  • 1 teaspoon dried chives
  • 2 teaspoons sugar


Thinly slice apple and cabbage and toss together with lemon juice, zest, and salt to taste.

Chop pecans and toast in a small skillet with butter over medium heat, stirring occasionally. Add chives. Sprinkle sugar and salt to taste over pecans, stirring until nuts are evenly coated. Cool pecans slightly. Add pecan mixture to apple mixture and toss. Adjust salt to taste.
