Charlotte Russe


  • 24 lady fingers, split
  • 2 tablespoons unflavored gelatin
  • 2 cups milk
  • 2 teaspoons of vanilla
  • 4 cups whipping cream
  • 1-1/2 cups sugar
  • 1 cup whipping cream, whipped
  • 1 tablespoon powder sugar
  • Chocolate curls


Line bottoms and sides of a truffle bowl with lady fingers.

Mix gelatin and milk, heat over medium heat until gelatin dissolves. Remove from heat and add vanilla.

Whip 4 cups of cream gradually adding sugar.

Fold into cooled gelatin mixture.

Pour gently, into truffle bowl, being careful not to move lady fingers. Refrigerate until set.

Sweeten remaining cup of whipped cream powder sugar and lightly spread over top.

Garnish with chocolate curls.

Make chocolate curls out of a good quality chocolate bar by refrigerating bar for about 10 minutes and “shaving” with a vegetable peeler.
