Chicken with Peanut Sauce

  • 1 Tbsp vegetable oil
  • 2–3 large cloves garlic, minced
  • 2 C chicken broth
  • 2 sweet potatoes, about 1 1⁄2 lbs
  • 4–6 boneless, skinless chicken thighs
  • 8 oz tomato sauce
  • 1⁄4 C peanut butter
  • 1 1⁄2 tsp salt
  • Hot sauce to taste
  • Cooked rice for serving


Heat oil in a wide, deep skillet over medium heat. Cook garlic until fra-grant, about 4 minutes. Add broth. Peel potatoes and dice in 1⁄2-inch (or so) pieces, adding to pot as you do. Cook 20 minutes uncovered, stirring occasionally. Add chicken, tomato sauce, peanut butter, salt and hot sauce. Simmer, stirring occasionally, to cook chicken through, about 20 minutes. Ladle over rice and season with garnishes.
