Gingerbread Waffles

  • Makes 8.


  • 2-1/2 cups flour
  • 1/4 cup brown sugar, packed
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 Tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 2 egg whites, whipped
  • 1-1/2 cups buttermilk
  • 1/4 cup molasses
  • 6 Tablespoons sour cream
  • 3/4 cup raisins


Prepare waffle iron as directed by manufacturer. In mixing bowl, combine flour, brown sugar, baking powder, baking soda, ginger, cinnamon, and allspice. In another mixing bowl, combine egg whites, buttermilk, molasses, sour cream, and raisins. Add dry ingredients with wet ingredients until just moistened. Pour enough batter to fill two-thirds of waffle iron. Cook until golden brown; set aside. Repeat with remaining batter.
