Groundhog Cookies

  • ¾ C butter flavored Crisco
  • 1 ¼ C firmly packed light brown sugar
  • 1 egg
  • 1/3 C milk
  • 1 tsp vanilla
  • 2 C quick oats
  • 1 C self-rising flour
  • ½ tsp salt
  • ¼ tsp cinnamon, optional
  • 1 C raisins or chocolate chips (or ½ cup of each)
  • 1 C chopped nuts, optional
  • ¼ C coconut, optional


Heat oven to 350°. Lightly grease a baking sheet with butter flavored Crisco.

Combine Crisco, light brown sugar, egg, milk, and vanilla in a large bowl. Beat at medium speed with an electric mixer until well-blended. Combine oats, flour, salt, and cinnamon. Mix into creamed mixture at low speed just until blended. Stir in raisins, chocolate chips, nuts, and coconut. Drop rounded tablespoon of dough 2 inches apart onto cookie sheet. Bake for 10 to 12 minutes. Let cool on cooling rack.
