Instant Pot Mac and Cheese (video)

- 1 lb pasta (shells, elbow macaroni or your preference)
- 4 C water
- 4 oz cream cheese
- 2 Tbsp butter
- ½ tsp salt
- ½ tsp pepper
- 16 oz block cheddar cheese (see note)
- ¼-½ C milk
Add pasta and water to an Instant Pot. Cover with lid and seal. Set to custom pressure cook time of 5 minutes. While pasta is cooking, shred cheese using box grater or food processor. Manually release steam once time is up on Instant Pot. Remove lid and stir in cream cheese, butter, salt and pepper.
Add freshly shredded cheese and stir for 1-2 minutes until cheese is melted and creamy. Add 1/4 cup milk and stir. Add more salt and pepper to taste if needed. Add additional milk if preferred to loosen sauce. Serves 6–8.
Note: Do not use bags of shredded cheese, which contain anti-clumping additives. Freshly grated cheese melts more smoothly.
