Karen Day’s Pumpkin Pancakes

  • Makes 8-12 pancakes.


  • 1 1/4 C self-rising flour
  • 1/2 tsp each of cinnamon, ginger, and salt
  • 1/8 tsp nutmeg
  • 2 Tbsps brown sugar
  • 2 Tbsps melted butter
  • 1 C milk
  • 9 Tbsps canned pumpkin (do not use pumpkin pie mix)
  • 1 egg


Mix all ingredients together. Drop 1/8 C batter onto griddle or nonstick skillet on medium high. Flip when edges start to firm up. Makes 8-12 pancakes.
