Kentucky Derby Tarts


  • 1-1/2 cups all-purpose flour
  • 1/2 cup shortening
  • dash of salt
  • 1 teaspoon sugar
  • 1/3 cup ice water
  • 1 egg yolk
  • Filling
  • 1/2 cup flour
  • 1 cup sugar
  • 2 eggs, beaten
  • 1 stick butter, melted
  • 1/2 cup pecans
  • 1 cup chocolate chips
  • 1 teaspoon vanilla
  • Bourbon


Mix flour, salt and sugar. Cut shortening with a pastry cutter. Beat egg yolk with ice water and add to mixture one Tablespoon at a time. Put into miniature muffin pans.

Mix flour and sugar and eggs and melted butter. Add pecans, chocolate chips and vanilla. Pour into shells and bake at 350° for 20 minutes. Brush tarts with bourbon while hot.

Makes 36 miniature tarts.
