Light Chocolate Bavarian


  • 1 envelope unflavored gelatin
  • 1 cup skim milk
  • 1/2 teaspoon vanilla extract
  • 1 cup ice water
  • 1/4 cup cocoa
  • 2 teaspoons artificial sweetener
  • 1 cup nonfat dry milk


Soften gelatin in 2 Tablespoons water.

Combine cocoa and skim milk in small pan and stir to make a smooth paste.

Add gelatin and sweetener and cook over low heat, stirring until gelatin is dissolved.

Remove from heat and add vanilla. Let stand until mixture thickens.

Combine dry milk powder and ice water in mixing bowl.

Beat at high speed until stiff.

Add chocolate mixture gradually, beating constantly.

Spoon into greased 6-cup mold or 10 individual cups.

Chill until firm.
