Oma’s Cucumber Salad


  • Serves 8.


  • 4-5 cucumbers
  • 1 tsp salt, or to taste
  • 1 Tbsp lemon juice, or vinegar
  • 2 Tbsps olive oil or other oil
  • 2 Tbsps honey
  • 4 Tbsps (or more) fresh chopped herbs (dill is especially good, oregano, basil, etc.)
  • 1⁄2 tsp freshly ground black pepper, or to taste


Slice cucumbers very thinly using hand-held grater or mandoline. Sprinkle cucumbers with salt so that it is well-distributed. Let sit in a bowl for 20 to 30 minutes. Drain liquid.
Meanwhile, mix lemon juice, olive oil, and honey. Stir until honey is dissolved. Drizzle drained cucumbers with dressing. Add herbs and pepper to taste. Taste for salt and add some if necessary. Serve immediately or refrigerate. Good as a side dish to grilled meat or any mid-summer meal.
