Pineapple Jubilee


  • 1 cup sugar-free vanilla yogurt
  • 2 Tablespoons frozen orange juice concentrate, thawed
  • 2 (15-1/4 oz.) cans juice-packed pineapple chunks, drained
  • 1/4 cup golden raisins
  • 1/4 cup diced maraschino cherries, rinsed and drained
  • 1/4 cup finely chopped walnuts


Combine yogurt and orange juice con­centrate in a large bowl. Stir in pineapple, raisins, cherries, and walnuts. Chill 30 minutes. Serve using a slotted spoon.

Makes 5 (1-cup) servings.

Food exchange: 1-1/2 fruit, 1 skim milk.
