Porgie’s White Barbecue Sauce

Ingredients

  • 2 small onions, quartered
  • 1 C mayonnaise
  • 1/3 C sour cream
  • 1 ½ tsp Worcestershire sauce
  • 1 tsp black pepper
  • 1/8 tsp liquid smoke (a small dash)

Directions

Smoke the onions if you have a smoker. If not, roast them at 400°F for 20–25 minutes until soft and slightly charred. Blend cooked onions in a food processor until they reach an applesauce-like texture. In a mixing bowl, whisk together the mayonnaise, sour cream, Worcestershire sauce, black pepper and liquid smoke. Stir in blended onions until smooth and well combined. Chill before serving. Store in the refrigerator for up to one week.
