Savory Summer Ribs

  • 1⁄4 C salt
  • 2 Tbsp paprika
  • 2 Tbsp chili powder
  • 1⁄2 tsp cayenne pepper, or to taste
  • 2 Tbsp granulated garlic
  • 2 Tbsp light brown sugar
  • 2 tsp dry mustard
  • 2 tsp ground cumin
  • 2 tsp freshly ground black pepper
  • 1 tsp dried oregano
  • 4 to 6 lbs spareribs


Mix all the rub ingredients in a small bowl or jar. Remove the transparent membrane from the back of the ribs ( Rub the spice mixture all over the ribs to coat them completely. Cook on low, indirect heat on a covered grill or in a 275° oven, tightly covered with foil, for 3 to 4 hours. Serves 4 to 6 people (about 1 pound of ribs per person). 

When making any sort of spice rub for meat, you have the option of doubling or tripling the recipe to store in a covered jar on a dark shelf or in the freezer (for longer storage).
