Sea Foam Candy

  • 2 cups light corn syrup
  • 2 cups packed light brown sugar
  • 4 teaspoons baking soda


Combine sugar and syrup in heavy pan. Cook over medium heat until boiling, stirring constantly. Cook until mixture reaches hard crack stage on candy thermometer 300°. Remove from heat. Prepare a buttered 9×13-inch pan. Add baking soda and whisk quickly until completely blended. There will be lots of foam at this point. Break up into small pieces when cool and dip in melted chocolate confectioners coating.
